Gold and Pearl Encrusted Berry Muffins
Sometimes the difference between boring jeans and a t-shirt and looking fancy is a strand of pearls. The same goes for breakfast. A little pearl sugar (available at specialty grocery stores in the baking aisle) and a few gold stars (by Wilton, available at specialty grocery stores and party supply stores) go a long way to dressing up breakfast.
These are the kind of muffins that are ready for a party. Or for a Monday morning.
1/2 cup
butter, melted
1/2 cup sour
cream
1 egg
1/2 cup
brown sugar
1/2 cup
white sugar
1 teaspoon
vanilla
1 1/2 cups
flour
1 teaspoon
baking powder
1/4 teaspoon
salt
1/2 (or so)
cup washed and dried mixed berries
1 tablespoon pearl sugar
edible gold stars
Preheat oven
to 325 degrees. Blend together flour, salt, and baking powder in a small
bowl and set aside. In the bowl of a stand mixer combine all other
ingredients – except blueberries. When wet ingredients are well combined
add in flour mixture. Stir until just combined - do not over beat!
Stir in berries gently and scoop batter into prepared muffin tins. Sprinkle pearl sugar and gold stars evenly over the top of each muffin. Bake 25-30 minutes until a toothpick comes
out clean. Remove from oven and let sit
a few minutes before serving.
